When a Casino does a "soft" credit check on you to check you out what do they see?

Not 100% sure how it looks on your end, but for us, we use Experian to verify your identity and age. Their response is basically: Yes or No. In the event of NO - we wont allow you to deposit and play.
 
Do you see accounts and limits?
I am not sure how your name and date of birth can provide a risk score on its own
nope. like i said, we get a yes or no on your personal details we check with them.
 
There's better people to answer...say @Mark_Lottomart for example but pretty sure it's simply risk management and due dilgence not invasive.

Not sure I'm an expert on the topic, but I have to concur with @L&L-Jan, in my experience the only time we use credit agencies (such as Experian) we're only using them to verify you are who you say you are. E.g. we pass "John Doe, 01/01/1980, 1 High St, London, L1 1ND" and we either get a match (e.g. you exist) or a fail.

The "issue" for players is that some providers record that this has been checked as a "soft footprint", although this shouldn't affect any credit application or score etc.

Soft checks aren't an issue. They're not gonna go snooping into your bank account on a soft check. It can reveal your credit score which is one way companies can decide if you're a risk (to them) or not.
I signed up with a credit report site and get a monthly report as well as access to my credit details. It's free, although some providers do charge a fee for this.
In the past 24 months I've had 43 soft checks and one hard check. The hard check was done by an insurance company. Pretty standard. 24 of the soft checks are from the credit report agency themselves as they need to look things up to provide the monthly report, the others include a few gambling sites. All of the casinos have the reason for the check as 'anti-money laundering' although Entain have a second check listed which says 'gambling affordability'.
My credit score is still rated as 'excellent'.

now you get free report from you bank, all time massage will pop on bank app would you like to see your credit report
