Beer and Cheese

I love beer.

And I love Cheese.

While this time of year can be difficult to find beer (Its Passover here in Israel, everything's gone to crackers and 'unleavened' bread.) I know a few places that sell beer year round!

So, what I'm wondering- does anyone here on CM know any really good Cheese and Beer pairings?
Or, even just really good beer or really good styles of cheese!

I'm willing to go the distance to find something new to try, because I just love trying new things!

My favorite is sliced Colby cheese on a cracker.
