I know that moderators and accredited reps will have different coloured names, but why do others (who don't appear to be either Mod or Rep)?

Blue is a newbie, light orange is senior member and dark orange is Meister member. You and me, as "newbies" will become senior members (from blue to light orange) after one year as members (+ one needs to have a certain amount of rep points, 500+ or something). And later, from senior to Meister member.
That is only if you behave yourself, of course!!

If you scroll down on the front page of the forum you'll see the "Total members that have visited the forum ..." section. Just below it is the colour code chart for forum member names:

Probably worth mentioning that there's another "colour" for users that isn't mentioned in the colour table: invisible. All levels of membership (see here) above "Registered User" have the option to "Set Self to Invisible Mode".
"Set Self to Invisible Mode" means the user name doesn't show up on the "Currently Active Users" list (or the "Total members that have visited the forum today" list? Not sure about that). Think of it as "private" forum browsing, you can be on without folks knowing you are on.
