Not sure where to post this question, so please move if its in the wrong place.

New to this site (excellent BTW) Being playing at The Riverbelle for the past few years. My verification was sorted their via a scan of my passport and a headed letter from my bank as proof of address.

Also joined 32red via this site and was auto verificationed.

Have joined Mrs Smiths, as I like the NetEnt slots and wanted to get my verification sorted today before I deposit anymore money.
They want a scan of the front and back of my credit/debit card signed and with ONLY 2 numbers covered up.

To be honest I,m not keen on sending all this info. Is this normal?

Yes, as casinos are obligated either to verify via approved KYC (know-your-customer) methods such as those you describe at first withdrawal OR if UKGC/Alderney/IOM they may require this once withdrawals total a certain amount like £3000. Totally normal. I would recommend you keep a folder on your PC with these scans in and PRE-VERIFY when you join a site as it makes withdrawals faster.
