A Bingo Picnic Party Recipe!
A creamy potato salad, perfect for a summer picnic.

Bingo in the summer is great, but after bingo there's nothing like packing up a basket full of treats and heading to the country for a picnic. Here's a great recipe for potato salad that is sure to be a hit!

Cucumber Potato Salad

Original recipe yield:_36 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
Ready in: 30 minutes
~~~~~~~
5 pounds red potatoes
4 celery ribs, sliced
1 bunch green onions, sliced
2 tablesthingys dill weed
2 teasthingys salt
2 cups mayonnaise
1 (16 ounce) bottle cucumber ranch salad dressing
~~~~~~~
Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and cool. Cut potatoes into small cubes.
In a large serving bowl, combine the potatoes, celery, onions, dill and salt. In a small bowl, whisk mayonnaise and salad dressing until blended. Pour over potato mixture and stir gently to coat. Cover and refrigerate for at least 6 hours before serving.

Perfect timing as I have to drag everyone to an outdoor doo this weekend at the folks. The cucumber sounds to be a nice refreshing twist. I will supply the salad and let you know what they all thought. Thanks Bingo :thumbsup:
