changing email accounts once signed up?...

Is this easy to do?

Unfortunately, I signed up to about 10-12 online casions with my primary email address.

Do some sites allow to change your info on their site or is it more likely I'd have call each one on phone?

This should be just a simple email to their support. Just email them and tell them to change your email address. Shouldn't be a problem since this happens all the time.
