why is it that a couple of the large casinos like Ladbrokes don't accept German players?

No idea, but in the past they have stated that they believe that gambling online is illegal in Germany. Gambling online is not legal in Germany in the sense that there are no laws to protect a player if they have a problem being paid etc. Thus it is not legal. Ladbrokes and co. may have this mixed up with being prohibited...but the law is still pretty fuzzy. They are merely being cautious in this weirdo world.
