It is OK for juices as concentrates are used and banana is mixed with other flavours
No, because the banana chunks/puree turns pink after sterilization in the cooker. Not that it is a health risk but consumers would not buy the product.
To this date no solution around that. It was a similar issue with pineapple that would turn black in a can. After much research those cans are now not coated on the inside as all other food cans and the pineapple reacts with the tin in the can walls to stay in its original color
Looks like there is some money to be made for the first person to find the solution.
My first attempt will be to freeze dry the banana then can it in the extracted liquid so it reconstitutes in the safety of the can.
