Cryptologic (e.g. Intercasino) have the best 3D software IMHO.
I would recommend them because they are one of the oldest & most trusted casinos on the net.
I think most players don't much care if a casino is 3D or not, as long as they are getting a fair game.

You'd probably be better off worrying about whether or not you can win and if you do win if the casino will ever actually pay you more than worrying about how many sides of the slot game you can see while you play.

Surely there is a need to innovate, seems many of the operators roll out the same games as one another.
What about eg an online replication of a bricks and mortar casino giving players a real sense of community at the tables, ability to interact with other players etc?
How do the operators take their online casinos to the next level as technology improves?

There is one from French firm Le Croupier. It had some good features but a lot of the time ended up looking like a bad video game from the 1980's. Another drawback is they didn't have many games and blackjack had glitches resulting in hands not playing correctly. I posted two examples to the operator but they never even replied so I lost confidence and stopped playing there. Quite a few players had similar problems.
But I can see that it will come. It will take one of the big companies to do it though and perhaps they are better off waiting until broadband speeds improve. At the moment some of the softwares do look very dated and one dimensional.
I guess it hasn't happened because operators are not willing to pay for good software. If you spent a lot of money developing a 3D product and a rival is offering a bog standard casino at a far cheaper price then it is going to be hard to sell. Like Playtech sell their software to dozens of operators, they have to keep selling and selling to make good profits.
It would be interesting if someone were to charge the consumer like you would for a games console. For example I might be prepared to pay 25 say for a 3D package I could use at different Playtechs say. I can see a big future for 3D coming through Facebook or Twitter say instead of the current operators. But I think the consumers will have to end up paying for it as the operators most likely won't under current conditions.

If one of the major 'tried and trusted' operators launched a 3D platform (and assuming that the games perform as well in 3D as they do currently in 2D; if they don't then rightly so there's no chance of success!) do you think players would generally remain permanently in the 3D environment rather than return to 2D on the basis of their enhanced experience? Any 3D environment would obviously need to be as intuitive as regular online casinos are now.

I was going to take a screenshot of $US Intercasino's 3D lobby, but since last week they've scrapped it!
However, the UK version still has it... for now:

If there were any players, you would see them seated at the tables and could just click an empty seat to join in.
In the first version of Crypto at Will Hills (2001) you actually took a "virtual walk" around the casino floor until you found a table you wanted! Gone for ever now.

The problem with 3D gaming is that not everyone's computer can handle it. 3Dice has similar problems. Even with my computer which is pretty fast with dual core processors and a 1 gig video card has trouble with 3Dice if I don't reboot once in a while. So maybe the solution is to have two platforms playing the same games. If your computer can handle the 3d interface then play that and if it can't switch over to old fashion 2D and play the same games.

I think by 3D you are meaning something like the Le Croupier concept, I don't regard anything Intercasino have as 3D.
I certainly enjoyed Le Croupier for all it's wackyiness. I do think it's high time gaming did move closer to the Xbox experience. 3D and more interactivity are the future I think.

Watch this space, some of the buzzwords in the industry at the moment seem to be "innovation" and "differentiation" so I don't think it will be too long before one (or some) of the major players launches something properly in 3D, taking online gaming to the next level. It's overdue!
