I have been playing for 2/3 weeks with a little success, but have noticed this week that my minimum bet has been increased from £5 to £10. This is on supposedly £5 tables, while others are still allowed to bet the table minimum. Seems a rather worrying tactic from Betfair. Has anyone else encountered this and is this likely to escalate in the future to say £25 minimum bet requirement?
The early morning low stake tables when 3 tables have a minimum bet of £2, I am allowed at the moment to be £2 on one of them. So at least that is something, I suppose.
 
I can't remember if Betfair still use playtech. If they do, on the left hand side of the blackjack window there is usually a box where you can select the wagering ranges. If it's a betfair branded private table they do sometimes have higher value tables. Worth checking you're not on a VIP table :)

Most Casinos will adjust the table stakes down during the quieter periods. As the tables get busier the minimum bet increases. This happens all the times in Land Based casinos. It a way for the casino to keep the tables busy at quiet times. It's a simple case of supply and demand. During busy periods they will want to maximise the value they get from each seat, so having 7 seats filled with £5 players isn't as good as 7 seats filed with £25 players. Simple economics.

During peak periods you won't find many live casinos offering £5 Tables. Evolution based casinos have Party Blackjack which is a multi player 7 seat table, this always has low minimum stakes.

Other places to find £5 minimum would be casino that have dedicated tables. They have more flexibility and may have one table at low stakes. The issue you'll find is being able to get a seat, they are always busy.

You're quite correct, clicking on the table stakes box will bring up a drop down menu with a selection of stakes. It gets adjusted throughout the day, depending on how busy the table becomes.

Knew you'd have the answer, I got my betfair account closed for taking advantage of a promotion back in the good old days so wasn't aware if they had jumped ship over to evo.
