CPU for DIY SFF?

Posted this on f-book but thought the CM faithful might have good thoughts on the subject too ..

.. got a question for the tech-heads out there. I'm thinking of building a NUC or some equivalent: SFF box (the smaller the better), fanless, upgradeable, etc. Thing is I don't want it to be gutless, it'll need to handle Photoshop and suchlike. This won't be a gaming machine, pure workstation stuff. Obviously thinking something low-wattage, mid-range CPU Mark, etc.

Any recommendations what Intel processors I should be looking at, assuming this is a DIY project (or some portion thereof)? Budget for the CPU is roughly £250 or thereabouts.

FWIW I'm thinking 8-16gb RAM, prob a 1-2tb SSD, 2K monitor, external PSU if at all possible. The box can run a bit warm (cooling fins, etc) but there won't be a huge amount of air circulation.
 
mini itx is best

If you want guts go mini itx mobo you can get compact cases ect you will be paying twice as much for a nuc of same power or less power
