Wedding Soup

Make your normal chicken soup:
I small chicken
1 whole onion-whole or cut
2 whole carrots cut in slices
2 celery stick cuts in slices
salt, pepper, parsley to flavor
bring to boil and then simmer
In another pot steam 3 heads of escrole
after you clean your greens, cut into pieces.
steam and set aside..
Cook your chicken soup for 3 hours-remove you chicken from the pot and toss some of the chicken back into the pot of broth, make sure all chicken bones are removed from broth, chicken tend to fall apart when your cooking it.
After you toss the chicken back in, toss in your greens, add a cup of cheese, and a dozen of eggs, (beat them before you throw them in)
Let cook for another 40 minutes-Delicious
