Chili Crusted Shrimp Salad
1 plateful of mixed greens
1/2 diced avocado
1/2 blood orange (ate the other half when I was getting it ready)
1 julienned red pepper
8 large raw shrimp
About 3Tbsp of mixed paprika, chili powder & cayenne
Peel and devein shrimp. Pat dry with paper towel and dust with chili powder, paprika and cayenne to taste. Heat a dry skillet to medium high, and toss in shrimp. Let first side cook for 1-2 minutes, then turn. Another minute or so for second side.
Add to plate of greens.
Dressing
Deglaze pan with 1oz. dry white wine (I used vermouth), or sherry, or apple juice, and add 1 teaspoon wholegrain mustard. Add a squirt of lime, and whisk in a tablespoon of olive oil. Pour warm dressing over greens & shrimp.
Serves one
