Kakata's Panini

Inspired by our Italian friend and the fact that I had leftover roast pork, I give this twist on a Miami classic, the Cubano.

Kakata's Panini
1 ciabatta bun (or other crusty bread)
2 slices roast pork
2 slices proscuitto cotto*
2 slices provolone cheese
sliced dill pickles
Whole grain mustard
butter (optional)
* proscuitto cotto is Italian ham, and any good quality luncheon ham may be substituted
Prepare sandwich by splitting open bun. Spread bun with butter if desired and whole grain mustard.
Layer 1 slice cheese, pork, ham, pickles and 2nd slice of cheese.
Wrap sandwich tightly in foil.
Cooking
If you have a panini press or George Foreman grill, these are an excellent means to heat this sandwich, otherwise use a skillet.
Lay foil-wrapped sandwich in skillet. Weigh down with something heavy (I use a 28 can of tomatoes), and press sandwich down. Keep pressing down to flatten from time to time until top side of foil becomes warm to the touch 5-7 mins. Turn packet over, and again press down firmly on weight. Heat for another 5 mins or so on second side.
Remove from heat, unwrap and serve.
