A friend gave me this one awhile ago.
Deadly Zucchini Crumble
(What to do when you can't get batter to stick to vegetables.)
3 cups of zucchini, these can be large, the ones you forgot to pick from the garden. Peel the zucchini and cut into 3 inch sections. If the zucchini are large cut away the seeds. Cut zucchini into lengths, like large steak fries.
1 c. seasoned bread crumbs
1 c. corn meal
1/2 c. all-purpose flour
3 eggs
1 tbsp. garlic powder
1/2 tbsp. pepper
Pinch of paprika
Malt vinegar
Garlic salt
Basil
Water or milk to suit if needed
Oil, sunflower or vegetables, enough for about 3 inches of oil depth.
Mix all together, use water or milk if necessary to produce creamy consistency, a little more of corn meal if needed.
Heat oil very hot. The rest gets simple and deadly. Throw all the zucchini into the bread crumb-cornmeal mix. Mix gently and pour the entire mixture into the hot oil. Stir, preferably with a stick and don't let the mix climp together, break apart. Fry until golden brown.
When golden brown, remove from oil into a bowl lined with lots of paper towels. Move entire load into another paper lined bowl, get as much oil on the towels as possible. Then dowse the entire works with plenty of malt vinegar and garlic salt and some basil. Serve hot or cold, maybe with a little horseradish and ketchup dip.
