Lemon Roasted Chicken

Lemon Roasted Chicken
1 1/4 cup freshly squeezed lemon juice
2 or more if you love garlic cloves garlic crushed
1 tablespoon honey
A pinch of sugar
1 teaspooon sea salt
Only cook with sea salt
1/2 teaspoon ground black pepper
1 chicken (about 4 pounds), quartered
1/2 or more cup pitted olives
1 lemon, cut into wedges
chopped fresh parsley
Add Rosemary if you like (A Little should do it)


Combine the lemon juice, garlic, honey, salt, and pepper in a large re-sealable plastic bag. Add the chicken and marinate for at least 2 hours.

Heat the oven to 425
Fahrenheit. Arrange the chicken skin side up in a baking dish and pour the marinade over the top. Bake for 30 minutes.

Add the olives and lemon wedges and bake until the skin is browned, about 30 more minutes.

If you like to make it fancy Garnish with freshly chopped parsley before serving.
