MG Carribean Stud Poker actually has a lower house edge compared to the standard pay table. The variance is much higher and you're right about needing the dealer to qualify for those big hands. I can imagine how annoyed i would be to wait for ages to be dealt a good hand and for the dealer not qualify....or you could just not play the game.
I remember 32red used to have a happy hour type promotion and would promise to pay you for the Royal Flush in Stud Poker even if the dealer didn't qualify. Of course, the difficult part is to hit the Royal Flush first
