If it's a non-slot game, it's usually practical to determine the payout with optimal strategy. For simple games, it's often trivial. For slot games, things are more complex. If the game is in the flash casino, then in many cases, you can determine the payout by looking at the reel data that is passed, using HTTPWatch or similar program. You can also see that the reels are the same in real mode and practice mode.
The payout of MG slots seems to be inversely correlated with variance. Non-progressive games tend to be in the 94.5% to 96.5% range. Progressive games are a bit lower.
