Happens outside gambling too..I came across it in a financial call centre once. The logic being that because customer relationships were very important, they wanted to show continuity as staff moved on. And the Ronald MacDonald example isn't far away either - continuity by means of a mascot rather than a celebrity. Aside from which it wouldn't be great
PR if the celebrity died from food poisoning, while any number of people who reside in the Ronald suit can die of it, no problem. Although who would pay for a Maccy D's cheeseburger by credit card MJ?
